News / Baharat: Posadas’ new culinary venture at Fiesta Americana Mérida
Posadas’ latest gastronomic offering features over 20 dishes—cold and hot plates, grilled skewers, shawarmas, and specialties—including Beet Salad, Classic Hummus, Moro Lamb, Falafel, and more

Fiesta Americana Mérida celebrates 30 years of excellence in hospitality and unforgettable experiences. As part of this milestone, the hotel announces the opening of Baharat: A Journey of Soul and Flavor, a new culinary space inspired by the rich traditions of Middle Eastern cuisine. Created in collaboration with Lead Chef Gerardo Rivera, this concept blends international ingredients and techniques with the contemporary aesthetic that defines Mérida, delivering a unique experience designed to delight every guest.
Since its opening in 1995, Fiesta Americana Mérida—part of Posadas, Mexico’s leading hotel group—has become a favorite destination for travelers, thanks to its architecture that harmoniously combines Porfirian and modern elements, and its diverse culinary and cocktail offerings, including Stelaris Cocktail Lounge, Café Kuun, Café Montejo, and the traditional Regional Yucatecan Restaurant.
With the goal of offering a sensory experience inspired by Lebanese culture, Baharat invites guests to enjoy warm hospitality in a sanctuary of sandy and terracotta tones that reflect its essence.
Guided by the motto “Cooking with soul and with history,” the restaurant embraces the philosophy that food nourishes not just the body, but the spirit. This vision is reflected in its curated menu of cold and hot dishes, grilled skewers, shawarmas, and specialties, including:
- Beet Salad: Roasted beet with lemon and olive oil
- Classic Hummus: Chickpeas, garlic, clove, cumin, and olive oil
- Keppe Tray: Beef and lamb, wheat, and olive oil
- Keppe Bola (Yucatán-style kibis): Beef and lamb, wheat, pine nuts, and xnipec
- Beef Rib in Jus: Meat jus, seasonal vegetables, and rosemary
- Moro Lamb: Cinnamon, fennel, four spices, and seasonal vegetables
These are just a few of the dishes available to those who appreciate authentic Lebanese cuisine. Located in the heart of the city at the intersection of Paseo Montejo and Colón avenues—a popular area for tourists exploring Yucatán—the hotel is an ideal spot for both lodging and enjoying high-quality food.
